Chunky Tomato Gazpacho
This week, we are just taking in all the sunshine (and hopefully a bit of rain), and loving every second of the hot stickiness.
However, the hot stickiness doesn’t make anyone here want to consume much in the way of hot soup. Bummer, because it’s such a great way to use all the garden veggies that are just rolling in right now. So, we turn to gazpacho, our summer version of veggie soup.
Serve alongside grilled chicken, or, with grilled cheese sandwiches!
- 4-6 cups of tomato or mixed vegetable juice
- ¼ c. of lemon juice or red wine vinegar
- 2 small cucumbers
- 2 avocados
- 2 tomatoes
- 1 bunch of green onions
- ½ c. cilantro
- salt and pepper to taste
- Chop all vegetables
- Mix with juice and vinegar
- Add salt and pepper to taste
